Fantastic Recipe! College Student Approved!

I've told you all how the beginning of the weekend was rather dismal concerning my cooking talent...a complete fail. Well on Sunday I redeemed myself by trying out one of Closet Cooking's wonderful recipes. I made Spinach and Feta Stuffed Chicken and it was so incredibly delicious!

As you can see, for the recipe you simply make a spinach/feta/ricotta mixture which is placed in the middle of a chicken breast and the chicken breast is then rolled up and tied to look like the above picture. You serve it along with a light sauce that compliments the stuffing mixture perfectly! My family really enjoyed this recipe! Try it sometime!
